Spud Pie, Is Freaking Yummy

So raising two beautiful kids that despised all tomato based stuff even ketchup, yes ketchup, recipes were tough! So one day about 20 yrs ago my daughter asked me to make a pizza without tomato having all of her favorite things; Alfredo sauce, potatoes, chicken, bacon and lots of cheese, Spud Pie was born. It’s probably one of the most delicious nontraditional pizza things you will ever try, though it is a pizza in my book. Totally decadent and filling. Are you ready for Spud pie?
Ingredients:
Spud Pie
- 3 cooked chicken breasts, sliced thinly or shredded
- 3 medium potatoes, 3/4 cooked, sliced very thinly (I use microwave)
- 3/4 lb bacon, cut into pieces and slightly cooked
- 4 cups of cheddar/mozzarella blend, shredded
- 1/2 cup olive oil
- 1 head of roasted garlic
- Alfredo sauce (recipe below)
- Pizza dough (recipe below)
Ingredients:
Alfredo Sauce
- 1 cup heavy whipping cream
- 1/2 cup butter
- 1 tsp minced garlic
- 2 cups grated Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp ground black pepper

Instructions:
Alfredo Sauce
- In a sauce pan over medium heat
- Add the cream and butter
- Bring to a simmer
- Whisk in garlic
- Simmering for 30 seconds
- Turn off heat, whisk in the Parmesan cheese, salt and pepper
- Continue whisking until cheese has fully melted
- Sauce is smooth and creamy
- Set aside for later
Spud Pie Toppings:
- Sliced chicken breasts
- Thinly sliced potatoes
- Bacon pieces
- Cheese
- Roasted garlic olive oil
- Salt and pepper to taste
Pizza Dough:
- Mix together in small bowl
- 2 pkg dry yeast
- ½ cup lukewarm water
- 1 tsp white sugar
- Let stand 10 mins
- In a large bowl, mix together
- ¾ cup Crisco oil
- 1 ½ cup lukewarm water
- 3 tsp salt
- 3 ¾ cups flour (plus more for kneading and rolling)
- Add yeast mixture from small bowl
- Mix thoroughly to form large ball
- Remove to floured surface
- Knead to develop, about 10 mins
- Divide into 2 or 3 equal parts in separate bowls
- Cover and let rise in warm spot for 30 mins
- Punch down and knead slightly again
- Roll out into 2 large or 3 medium pizza crust, using flour as needed
Assemble Spud Pie:
- On prepare pizza crust
- Brush on garlic olive oil
- Spread on even coat of Alfredo sauce
- Sprinkle small amount of cheese
- Layer thinly sliced potatoes
- Spread around sliced chicken breast
- Add few pieces of bacon
- Top with cheese blend
- Spread around more bacon pieces
- Place in preheat 425 F oven
- Bake for 25 minutes until bottom is done and cheese is golden brown
- Remove to cool slightly
Cut into 4 to 8 slices and serve. Makes 2 large or 3 medium pizzas. Great as leftovers and freezes well for a late night snack.
