Roasted Red Potato Salad

This recipe has a slight twist which brings a different flavor and texture to classic potato salad. We are going to oven roast the potatoes instead of boiling them! Yes, tender roasted red potatoes, crisp bacon, creamy eggs and onions get tossed together with a creamy dressing for a delicious Roasted Red Potato Salad. So good, so easy, a hit for sure. Mmmm let’s get cooking.


  • 3 lbs red potatoes, cut into 1 inch cubes
  • 3 tbsp olive oil
  • 2 tbsp parsley, chopped finely (green onions optional)
  • 1 medium onion, chopped
  • 5 large peeled hard-boiled eggs, crumbled or diced
  • 6 bacon strips, cooked and crumbled
  • 1 1/2 cup mayonnaise
  • 1 tbsp mustard
  • 2 tbsp diced pickles
  • Salt and pepper to taste
  • Paprika, minced green onion or parsley


  • Preheat oven to 400 F
  • In a bowl, toss washed potatoes in olive oil, parsley, green onions if using and salt and pepper to taste
  • Transfer to greased baking pan
  • Bake, uncovered until tender and golden brown
  • Stirring occasionally, about 25-30 minutes
  • Cool for 15 minutes
  • Transfer to a large serving bowl
  • Mix mayonnaise, mustard and pickles in a bowl
  • Add to potatoes and toss
  • Add onion, eggs, bacon, salt and pepper to taste
  • Toss to coat
  • Cover and refrigerate for several hours or overnight
  • Before serving sprinkle with paprika and minced green onions


Serve with a nice grilled steak or your favorite grill meats. Add some fresh seasonal grilled veggies for a great summer BBQ party side! Make sure there’s lot of cold beer for the gang.
