Here’s a new recipe I recently tried, BACON JAM. I have to say I’m eating it by the spoonful. Sweet, salty, tangy, with a smoky hint of java. It comes together quick with little prep and few ingredients. What takes the most time is developing the thick caramel goodness at a low slow simmer. Give it lots of time. Trust me, it won’t last long in the fridge. “I say put that s**t on everything”

Ingredients:

  • 1.5 lbs sliced bacon
  • Cut crosswise into 1″ pieces
  • 2 medium yellow onions, diced
  • 3 garlic cloves peeled and smashed
  • 1/2 cup cider vinegar
  • 1/2 cup dark brown sugar, packed
  • 1/4 cup pure maple syrup
  • 3/4 cup brewed coffee

Instructions:

  • Place all ingredients in large saute pan
  • Simmer on very low heat, stirring occasionally
  • Over time all ingredients will cook down and thicken
  • Looking for a jam like consistency
  • When done, remove from heat to cool
  • Store in fridge for up to a week, if it lasts that long

Enjoy!
