Here’s a new recipe I recently tried, BACON JAM. I have to say I’m eating it by the spoonful. Sweet, salty, tangy, with a smoky hint of java. It comes together quick with little prep and few ingredients. What takes the most time is developing the thick caramel goodness at a low slow simmer. Give it lots of time. Trust me, it won’t last long in the fridge. “I say put that s**t on everything”
Ingredients:
- 1.5 lbs sliced bacon
- Cut crosswise into 1″ pieces
- 2 medium yellow onions, diced
- 3 garlic cloves peeled and smashed
- 1/2 cup cider vinegar
- 1/2 cup dark brown sugar, packed
- 1/4 cup pure maple syrup
- 3/4 cup brewed coffee
Instructions:
- Place all ingredients in large saute pan
- Simmer on very low heat, stirring occasionally
- Over time all ingredients will cook down and thicken
- Looking for a jam like consistency
- When done, remove from heat to cool
- Store in fridge for up to a week, if it lasts that long
