Ingredients:

  • 2 1/2 cups roasted butternut squash, cubed
  • 1 cup granny smith apple, cubed
  • 1 cup yellow onion, chopped
  • 3 – 4 cloves garlic
  • 1 1/2 cup vegetable or chicken stock
  • 1 cup coconut milk
  • 2 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp nutmeg
  • 4 – 6 tbsp olive oil

Instructions:

  • Preheat the oven to 375 F
  • Peel the butternut squash with a peeler
  • Scoop out the seeds
  • Chop squash into cubes
  • Peel the apple, take out the core, and then chop into cubes
  • Toss the butternut squash and apple in 2 -3 tbsp olive oil
  • Place on oven sheet pan
  • Roast in oven 30 – 35 minutes or until soft and fork tender
  • While the butternut squash and apple are roasting
  • Roughly chop the onion and garlic
  • In a large stock pot on medium heat, add 2 – 3 tbsp of olive oil
  • Sauté onions and garlic 4 – 5 minutes, until slightly brown and fragrant
  • Reduce heat to low simmer
  • Add squash and apple to stock pot with the onions and garlic
  • Pour in the chicken or vegetable stock and coconut milk
  • Add salt, pepper, and nutmeg
  • With immersion blender, blend until smooth and silky
  • Simmer on very low until ready to serve

Serve this soup with a great salad and some crusty bread, garnished with your choice of toasted pumpkin seeds, parsley, a few bacon bits and a dollop of sour cream. Whatever your desire as this soup is creamy, filling and soothing.
