Texas Cowboy Chili: Slow Cooker Style

What is Cowboy chili? Well it’s tender chunks of beef sirloin (no ground beef here) in a spicy hearty tomato based sauce. Which is packed with flavor and a kick of spice and heat! Simmered for hours to develop deep rich flavors and warm comfort. The debate always starts when I add potatoes, corn and black beans to my chili! Who adds potatoes to chili? Is it really chili? Well it’s my take, it is chili and it’s a winner I’m told. Packed with amazing flavor and is SO good! So let’s dig out the slow cooker and get prepping scrumptious. 

  • 2 lbs boneless beef sirloin roast, cut into bite-size pieces
  • Dusting flour: 5 tbsp flour, 1 tsp freshly ground pepper, 1 tsp salt
  • 2 tbsp olive oil
  • 1 medium red onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 medium red bell pepper, chopped
  • 1 garlic clove, minced
  • 3 tsp salt
  • ½ tsp pepper
  • 2 cups water
  • 1 28 oz can of crushed tomatoes
  • 1 28 oz can of stewed tomatoes
  • 1 can black beans, drained and rinsed
  • 1 can of sweet corn, drained
  • 5 potatoes, cubed, blanched
  • ⅓ cup chili powder
  • 1 small can of Chipotles in adobo sauce (optional)
  • 2 teaspoon cumin


  • Coat beef cubes in dusting flour and shake off excess
  • Saute beef in fry pan till brown on outside, don’t cook thoroughly
  • Transfer to  6 qt slow cooker
  • Add onion, bell peppers, garlic to pan, sauté for 1 minute
  • Transfer to 6 qt slow cooker
  • Add salt, pepper, water, crushed tomatoes, stewed tomatoes, black beans, corn,  potatoes, chili powder, cayenne, cumin and chipotles if using to 6 qt slow cooker
  • Stir everything well
  • Set slow cooker to low for 6 hrs
  • If you would like a thicker chili, mix ⅓ cup water and 2 tbsp flour together and add to the slow cooker in the final hr of cooking, stir well


Serve topped with sliced green onions, sour cream, shredded cheddar cheese. Accompany with corn chips, corn bread or fresh tortilla’s for dunking.
