Barbacoa is an amazing, tender and flavorful dish found on any street corner taco stand of Mexico. So if you love Mexican food you’ll love Barbacoa, it’s an authentic Mexican meal that is made with either beef, goat or lamb. The flavor is amazing and it slow cooks to tender perfection! These slow cooker beef tacos could not be easier to make or more delicious to eat! Add it to your favorite taco list and let’s get cooking!
Ingredients:
- 4 lbs beef brisket or beef chuck roast
- 2 tbsp vegetable oil
- 3 – 4 chipotle chilies in adobo sauce
- 1 1/4 cups beef broth
- 4 tsp minced garlic
- 1 1/2 tbsp ground cumin
- 1 tbsp dried oregano
- 3/4 tsp salt, then more to taste
- 1/2 tsp ground black pepper
- 1/4 tsp ground cloves
- 1/4 cup fresh lime juice
Instructions:
- Cut the beef into large cubes
- In a large skillet over medium high heat add the vegetable oil and sear the beef on each side
- Transfer to your slow cooker
- In a food processor add adobo chilies, beef broth, garlic, cumin, oregano, salt, pepper, cloves, and lime juice
- Pulse until blended and pour on top of the meat
- Cook on low for 8-9 hours or high for 6 hours
- Shred the meat with two forks and turn slow cooker on warm

Strain liquid from beef and save for dipping. Serve in warm tortillas with your favorite desired toppings. Get ready for a great taco or two or three.
