Butter Milk Pancakes
Jalisco, Mexico
This recipe is my favorite pancake recipe ever! I love the tang of the buttermilk and use it whenever I can, especially in buttermilk biscuits. Whenever you serve these pancakes to family or friends they will attest that these truly are the best ever! I think what elevates these fantastic pancakes is the syrup that goes with them! It is truly phenomenal! Honestly the best pancakes and syrup you will ever make! Let’s fire up the griddle.

Pancakes
- 2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda

Buttermilk Syrup

- ¾ cup sugar
- ½ cup buttermilk

- 1 tsp vanilla
Instructions: The Syrup
- Combine butter, sugar and buttermilk in a medium saucepan
- Over medium heat
- Cook until sugar completely dissolves, stirring occasionally
- Then remove from heat

- Syrup will foam up, but that is part of what makes it so incredible
- Don’t worry, just be careful
Instructions: Pancakes

Drizzle your pancakes with syrup, served with fresh fruit and your favorite breakfast sides. Maybe a Mimosa or two. Also, this syrup can be used on your French toast to kick it up a notch, give it try.
Enjoy!
