My Big Sister’s: Homemade Egg Rolls

My Big Sister’s: Homemade Egg Rolls

Nova Scotia, Canada

This is my big Sister’s egg roll recipe, which is a variation of our Mum’s recipe. Our Mum always loved having plenty in the freezer for just that perfect occasion. Personally I love them, freshly made or from the freezer for a tasty snack. We use fresh egg roll wrappers from the produce department, not frozen. Personal choice after trying both. These homemade egg rolls are filled with beef/pork mixture and assorted vegetables, all wrapped up and fried to crispy perfection. The perfect make ahead appetizer for any event! To save some time use prepackaged coleslaw mix or any combination of filling that you like. Cooking is experimenting and creating your own perfect recipe. So let’s get prepping, wrapping and frying friends!

  • 1/2 lb ground beef
  • 1/2 lb ground pork
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 3 cups packaged coleslaw mix
  • 1/4 cup chopped scallions
  • 1/4 cup finely chopped mushrooms
  • 1/4 cup finely chopped sweet onion

  • 1 tbsp Soy sauce
  • 1 tbsp Hoisin sauce
  • 1 tsp toasted Sesame oil
  • Salt and pepper to taste
  • Egg roll wrappers
  • 1 egg beaten
  • 2 tsp vegetable oil
  • Oil for frying

  • Heat the 2 tsp of vegetable oil in a large pan over medium high heat
  • Add the beef/pork mixture and season with salt and pepper
  • Cook, breaking up with a spatula, until meat is browned and cooked through
  • Add the garlic and ginger then cook for 30 seconds
  • Stir in the coleslaw mix, green onions, onions and mushrooms
  • Cook until cabbage is wilted, about 3-4 minutes
  • Stir in the Soy sauce, Hoisin sauce and Sesame oil, then remove from heat

  • Let cool
  • Spoon approximately 2-3 tbsp of filling onto each egg roll wrapper and fold
  • Using the beaten egg to seal the edges of the wrappers as you go
  • Pour 2-3 inches of oil into a deep pot
  • Heat the oil to 350 degrees. Fry 3-4 egg rolls at a time, turning occasionally
  • Until browned all over, approximately 3-5 minutes
  • Drain on paper towels

Serve with your favorite dipping sauce! They are crispy, tasty and mouthwatering. Freezes well for a snack later.
