Summer Squash Patties

Summer squash patties or fritters as they are also known as are crispy mini-pancakes full of chopped summer squash. The mild flavor begs for a condiment, so serve with ranch dressing, some ketchup, or something like a spicy dip. Kid friendly for sure! Try mixing it up with different squashes that are in season or ingredients like diced tomato, green pepper or corn to sneak some extra veggies into everyone’s diet. The possibilities are endless, so dig out the frying pan and let’s get cooking.
Ingredients:
- 2 cups summer squash, finely chopped
- 1 cup onion, finely chopped
- 1 egg, beaten
- 1 tsp salt
- 1 tsp pepper
- ½ cup, plus 1 tbsp all-purpose flour
- vegetable oil
Instructions:
- In a large bowl, combine squash, onion, egg, salt and pepper
- Mix well
- Stir in flour
- In a skillet, heat ½-inch oil over medium high heat
- Using a tablespoon, drop batter into oil
- Cook about 3 minutes per side or until golden brown, turning once
- Drain patties on paper towels
Serve as a side with your favorite meal or alone as a snack for everyone, accompanied with assorted dipping sauces or sour cream. Garnish with your choice of either chopped chives, green onions, parsley, bacon bits or little hot sauce for some tasty fritters.
