Coconut Glazed Grilled Pineapple

This is a no-brainer with the abundance of fresh, inexpensive pineapple and coconut available here in Mexico. You’ll need just a few ingredients and it’s super easy. The perfect sweetness to end a great bbq. Add a dollop of cold vanilla ice cream and man you have heaven for the taste buds. This recipe also works well added to any grilled dish you’d like to make for your family and friends! Shall we fire up the grill?
Ingredients:
- 1 whole pineapple cut into spears or slices
- 1/4 cup cream of coconut
- 2 tbsp brown sugar
- 1/4 cup sweetened flake coconut
Instructions:

Heat a frying pan on medium high

Add coconut flakes, toast until light brown, 3-4 mins

Remove from heat and place toasted coconut in bowl

Combine cream of coconut and brown sugar in small bowl

Stir until smooth and sugar dissolves

Place pineapple spears on a hot oiled grill

Brush with coconut glaze

Turn pineapple after 3 or 4 mins and brush glaze on the opposite side

Depending on size of pineapples, they should take about 8-10 mins on the grill

Remove from grill and sprinkle toasted coconut on top
Serve as a dessert finale or add to your favorite grilled burger, fish or meat dish. Along with some great delicious sides and you’ll have a winner. Versatile and scrumptious addition to any meal. So keep grillin!
